What I Eat in a Day | Vegan | Packing Lunch for Work


When I first started working at this office we went out for lunch everyday. That was usually something fast, oily and unhealthy. I’ve changed my habits since and I started packing my lunch for work, which I will show you in this “What I eat in a day at work” video.

Lately I’ve been going to the gym every morning. My alarm goes off at 5:45 and the plan is to leave the house at 6:15 at the latest.

The first thing I do is drink a glass of water, which is half sparkling, half still water.

What I pack for the day is: 2 bananas, 1 container with plain oats and 1 container with lunch I made the day before.

While driving to the gym I have my banana. Not the safest thing, to eat while driving, but I think I’ve mastered it by now.

In the gym I always have 1 bottle of water, which is around 1 liter. If I don’t finish it while working out, I sit in the wardrobe until I do.

I get to work at about 8:15 at the latest, where I have my second breakfast.

I keep rice milk in the fridge at the office, which I pour over the oats I bring from home. Also, I like to slice some sort of fruit in the mixture, which is usually a banana.

While scrolling through my email first thing in the morning I enjoy my breakfast, which keeps me going until about 11 or 12 AM.

Finally, time for lunch. I would say 4 out of 5 working days I pack lunch for work.

That day I had cauliflower, mushroom sauce and quinoa. Basically it was a use-up-everything-in-the-frigde kind of lunch, as we were traveling in a few days.

Dinner is usually the only meal me and Luka have together, so we like to wait for each other to come home from work. As I cook the next day’s lunch after having dinner, we like to have something simple and quick.

We go through phases. For some time we only had vegetable soups with bread. Then there was a phase when we ate all sorts of salads and now we are in the “vegetable wrap” phase. Going strong for months now, ever since we first bought that hummus from Hofer. People from Europe will know what I am talking about 😉

We buy corn tortillas, slice up different veggies (for me salad, tomatoes and onion is a must) and wrap it together with a spread of hummus.

Also, we like to add some sort of hot sauce. YUM!

That is basically it for that day. Maybe I had some snacks here and there which I don’t really remember (probably some biscuits at work, which are always lying around everywhere, and are inevitable).
