Vegan Homemade Popsicles | Coconut Milk & Mango Ice Cream

The days are getting really hot here in Slovenia, and we need some icy snacks, guilty-free. We made some Vegan Homemade Popsicles!! There is no sugar added and it is made our of coconut milk, so it is really creamy.

The ingredients you will need are:

  • Coconut milk
  • Mango
  • Orange
  • Passion Fruit

Firstly, blend the coconut milk together with one mango to get your basic mixture.

Slice up the orange into not-too-thin slices and cut off the peel.

Get your popsicle tray, our is from Ikea, and place a slice of an orange on each side of the tray, as shown in the video. Next, fill up the tray half full with your mixture.

You can blend the passion fruit seeds in your mixture, but we decided to only place it in the middle of the popsicle. After doing that, top up the tray with the rest of the mixture.

Very easy and quick.

Now you want to insert the popsicle sticks. It you don’t find any, just improvise with whatever, like we did with the spoons. Now, I actually like the end result more. It makes it really unique.

If you stick is sliding on the side you should freeze the popsicle halfway first and later stick it in the tray.

As the spoons were quite wide we did it right away.

We left the popsicles in the freezer for the whole day before taking them out. But it was worth it, the end result is great. They turned out really cute and they are really tasty. Not so “icy” as they would if you used water instead of coconut milk.

I really hope you try and make popsicles, because it is really fun. And also, I challenge you to combine different fruits, colors and styles, and don’t forget to send me a picture of your masterpiece.
