Summer time equals vegan picnic time, right? We were in Paris for a week, sightseeing. It was wonderful, but looking at buildings in a crowd, at 30 degrees, can make you crave some nature. For that reason we decided to have a Vegan Picnic next to a lake, first thing when we get back.

Bled is one of the most beautiful places you will see in Slovenia, or let’s just say, in the world. And the best thing about it- it is 40 minutes away from our home!

Tuesday, after work, we decided to have a picnic and a short swim, so we prepared some food to take with us. Nowadays I just have so many bags anywhere I go, as I always bring food with me. But it is all worth it, especially at airports. 😉

We prepared some rice paper rolls and some elderflower juice.

The ingredients we used:

Rice Paper Rolls

  • Rice Paper
  • Cucumber
  • Carrots
  • Salad
  • Tofu
  • Sesame seeds
  • Sriracha Sauce (optional)
  • Soy Sauce
  • Paprika

Elderflower Juice

  • Homemade Elderflower Syrup (let me know, if you want to know how to make it-I’ll ask my mom, haha)
  • Strawberries
  • Lemon

Firstly, cut the tofu into straps, and marinade them with some soy sauce and paprika. Next, cut your veggies into little straps. Don’t make them too long, as you want it to fit the rice paper. After some minutes fry your tofu in a non stick pan. You don’t have to use any oil for this.

Now, for the fun part. Take one rice paper (hopefully you manage to buy some, that is not completely broken, like mine was) and soak it into water, until it becomes stretchy. Simply fill up your roll with your veggies and tofu, sprinkle some sesame on top and add some spice, if you like, with sriracha.

This might require some practice, but try and wrap up the roll so it stays in one piece.

For the drink, simple cut your fruits and together with ice, elderflower syrup, and some water make this amazing looking and tasting drink.

We used our super handy Flip Snackboards to cut our ingredients, and later used them as plates. Trying to eat healthy and traveling a lot, different accessories like this are kind of a must for us.
